Hi, I have a dog cake bakery but the clients have to ask for it 2 or 3 days ahead, but I want to have some frozen so if someone needs one immediately they can take it from the fridge. I use the cream cheese frosting for almost all the cakes.
Help me please!!!!

Chef's Answer ~ My best suggestion for you would be to freeze an undecorated cake. Then, if a customer wants a cake that day you can decorate it with their dogs name, event and preferred colors while they wait.
My only other thought would be to do an experiment with your cakes. Freeze a small cake or cupcake for a few days and then thaw it. See how your cake and frosting stand up to the process. If you are satisfied with the quality then you may be able to freeze a decorated cake.
