I have a dog with allergies and I'm trying to avoid corn meal. All of the liver brownie recipes I've seen call for corn meal. Any particular reason why? Is it possible to make it with a substitute for corn meal?
Chef's Answer ~ Corn meal is often used in liver brownie recipes because it adds a texture and another strong flavor to the brownies that most dogs love.
But, you can absolutely substitute it in my liver brownie recipes. I would recommend replacing it with a hardy flour like rye. However, you can also use whole wheat flour to substitute the corn meal.
